Multinational food companies raced to set pledges to slash the carbon emissions in their supply chains, and now those firms are scrambling to recruit the farmers needed to meet those targets, even as it remains unclear who’s going to foot the bill.

The retail food industry just isn’t what it used to be, says Leslie Sarasin, president and CEO of the Food Marketing Institute. Sarasin was one of more than a dozen speakers Wednesday at a day-long forum at the U.S. Chamber of Commerce which explored the changes in the food industry and provided a look at where the industry is headed.
