The Center for Great Plains Studies’ 48th annual conference will examine food systems in the region in relation to environments, agricultures, technologies, and societies by following production from plant to table, both ecologically and industrially. This interdisciplinary conference will cover many aspects of food and culture on the Great Plains with a focus on Indigenous food sovereignty movements; the long-standing significance of the meatpacking industry; related topics of labor, immigration, and health and safety standards; and the environmental impacts of food production and consumption.
