A new website offers a broad base of knowledge about high oleic soybeans, plants that produce what scientists are calling a heart-healthy cooking oil. Purdue University designed the site to help dietitians, educators, farmers, food industry professionals and consumers better understand the benefits of this relatively new monounsaturated oil. Marshall Martin, senior associate director of Agricultural Research at Purdue and director of the Purdue Soybean Center, said the site will be continually updated as researchers learn more about high oleic soybeans. The product has been tested for the past five years and has proven to be safe and healthy. “Results have been very positive so far throughout the supply chain, from farm to table,” Martin said. The multimedia, interactive website includes background text, infographics and video interviews with several high oleic soybean experts.
